Beet root have been utilized for their medicinal properties since ancient times. It is beneficial to the blood, heart, and digestive system. Beet root also helps to treat skin problems, headaches and lethargy. Try this healthy, delicious and easy soup, which contains no fat and very few calories.
1 Medium sized Beet root
1 Medium sized Onion
1 Medium sized Tomato
1 Tablespoon chopped Mint leaves
1 Teaspoon Black pepper
1 Bay leaf
1 Teaspoon Butter (optional)
Salt to taste
1. Take Beet root, Onion, Tomato and Mint leaves in a pressure cooker and pressure cook it for 3 whistles.
2. In a blender place the pressure cooked vegetables along with the water used to cook the vegetables. Blend it in a smooth paste. Drain the soup and remove the seeds of the tomato.
3. Now heat the soup and add bay leaf, salt, black pepper powder and allow it to boil. If using butter add it in the soup while boiling.
4. Your red, hot, and healthy soup is ready to serve.
